I receive about half a dozen calls (monthly) between 2AM and 5AM. The phone is next to my pillow. If it wakes me, I answer it. Of the 6, or so - "wee hours" calls - about half result in revenue. Others, noting the 24hr; decide to do some "price shopping" at 4AM.
If it's a true emergency, (usually a POA prior to a hospital procedure) or "for Court in the morning" - I accept the order and proceed to my "Early AM booking" procedure.
The requirement for me to accept the job is PayPal payment DURING the current phone call. "I'll call you back" is told "fine, but the fee goes UP xxx$ for waking me a second time". To me my fee is my hourly rate for 3 hours, one to wake up and get to them, a second to process their requirements, and a third to get home and back to sleep.
They say that New York is the "City that Never Sleeps" well almost; it's the city where 24x7 notaries often don't get a full night's sleep.
If you want the "24" symbol - be prepared for some phone calls from 123Notary (in the middle of the night) to verify that you both answer the phone and are willing to perform for a reasonable fee.

I would, but I'm a new business and I need/want all the work I can get.
That said, I have yet had a person call me 4:00AM in the morning for a notarization. Earliest I've had has been 9:00AM and the latest 7:30PM.

I wouldn't. I think you need to consider your area - many near locations such as military bases and airports MAY get genuine calls for legitimate last-minute notary work at that hour, and the jobs pay quite handsomely.
My neck of the woods? Any call after 9:30-10:00 at night is a wrong number or a partying redneck...:) So, I don't advertise 24/7, AND I unplug my phone in the bedroom when I go to bed. Nothing I can do for anyone at that time of night.

It looks great to market as being available 24 hours a day, but honestly: how many of you would get out of a warm bed at 4 am (without reservation) to notarize a car title?
