I called them the othe day to inquire about 4 non-payments. I was told checks were sent. They have a new method of payment. They are using a check payment service that emails checks. I had indeed received emails saying payment has been sent from Sunshine but didn't open the emails but continued to look for checks in my "snail" mail box. Blake explained the new format to me so I looked through old emails and, viola! they were there just as he said. He told me he would issue new checks and they arrived that afternoon. The email attachment has to be opened and printed. Then you cut the check off the top and the bottom is the stub which then I staple to the confirmation.

I did a one page deed signing for them, still no pay. They said they sent it, but apparently not to me. 60 days, still no pay.

As to your first scenario - I don't "pencil" anything in until I have written confirmation in hand. Until I have that confirmation that day and time is open to anyone else.
As to #2 - providing your work was flawless and there was no error on your part - I would not let them get away with it. Get a copy of the mortgage/security instrument you notarized and send it to them with your confirmation and a bill for the balance due plus late fees. I'd also include the title company in my email or fax so the title company is aware their "agents" are not honoring commitments to their notaries.
This company used to be great to work for....from what I'm hearing, not so much any more.

I have 2 issues with them, first I get a call to do a signing in a remote area, I know they have trouble getting people in this area as there are not a lot of Notaries that go there. I gave her my fee and she said to "pencil it in" as she had to get my fee approved. She repeated "pencil it in" at least 4 more times, she assured me there should be no problem getting the fee she just couldn't get an answer today. She was expecting me to commit to her but I found out after hanging up with me she immediately began calling other Notaries in the area. I don't appreciate being lied to, she expected me to commit my time and be loyal to her but she wasn't loyal to me. She called me the next day to say the signing had been cancelled, my guess is she found someone cheaper.
Second issue, I did a signing which I negotiated the fee with the scheduler for $100. I did the signing no issues. Today I get the payment $75.00. I called and spoke to someone in accounting and was told they only pay $75.00. I asked about my confirmation which reads $100 and my verbal agreement, and I was told it was a mistake. So if they don't agree with it, it is a mistake. Their written and verbal word doesn't mean a thing.
Well I guess I won't make the same mistake of accepting any jobs from them in the future.
