When I first started in this biz, I maintained a list of all the "problem" companies that I read about on the notary forums. If I received a call from one of those companies, I declined the job due to their poor payment reputation. Saved me a lot of headaches dealing with deadbeat companies.
When you accept a job, you should immediately go to the various forums and do a search for that company. If you find positive info - great! If you find negative info, you need to decide right away if you are going to ignore the bad reviews and "take a chance" (and probably chase your $$$ later) or give the job back to them ASAP (again, due to "reported payment issues".)
If you don't find any info on a company, either they are good to work with and no one has posted about them because there haven't been any problems, or they are a brand new company and you'll have to take a chance on them.
One other tip, when I receive a call on my phone from any company, I enter the number from caller ID into my contacts with the company name and the fee they are willing to pay. When they call again, that info pops up on caller ID. If it's a "no-no" company that I do not want to work with, I'll put "no-no" after their name and then when they call again I already know that I don't need to bother answering.
