If a company won't pay you, or says they will, but doesn't, then write a demand letter. 123notary has a great demand letter in one of our recource pages about how to get paid. Look it up and use that template as its very effective. Calling companies regularly keeps the pressure on them, and they don't want to waste time on the phone because time is money. Write up non-paying companies on the notary forums so other notaries will be warned that they don't pay. If a company owe you more than $500, consider hiring an attorney to write a threatening letter, or consider taking them to small claims court.
